Salsas
Salsas (Spanish for sauces) are usually a combination of chopped or puréed
tomatoes, onions, herbs, vinegar and chili peppers. Traditionally salsas are
served with tortilla chips, dips for crudités, and as toppers for meats or
seafood. They add flavor and color to rice and beans, soups and egg dishes.
The heat level of chili peppers is referenced by the Scoville Heat
Index that rates the mildest sweet bell peppers at zero and the hottest
ghost peppers at 1,000,000.
The heat from peppers comes from capsaicin, which is manufactured in the
ribs of the chili pepper and also found in the seeds. Capsaicin has no
flavor; it stimulates the pain receptors in your mouth rather than your
taste buds.
To neutralize the heat in your mouth: fats found in dairy products
are a good antidote. This is the reason we frequently find sour cream with
spicy Mexican dishes, yogurt with spicy Indian meals and coconut milk with
spicy Thai dishes.

Basil
– A great topper for stews and soups, beans, lamp chops and veggies of all
kinds. Our favorite is white pizza. The zing comes from cayenne peppers with
the jalapenos.
Ingredients: Tomatoes, Apple Cider Vinegar, Extra Virgin Olive Oil,
Water, Garlic, Onion, Green and Red Chilies, Herbs, Spices, Salt, No Trans
Fat.

Fire in the
Valley
– Delicious over cream cheese with crackers, with ham and eggs, on top of
chili, hot dogs and more. In spite of its name, this is our mildest salsa
with a combination of bell peppers and jalapeños.
Ingredients: Tomatoes, Water, Apple Cider Vinegar, Onion, Garlic, Red
and
Green Chilies, Herbs, Spices, Salt, No Trans Fat.

Roasted Green Chili:
A traditional/classic southwestern recipe. A few simple ingredients bring a
zing to scrambled eggs and chip dips. Great as a marinade for chicken pieces
or as a spicy meat topping.
